Oven Roasted curried Edamame

hi friends,

Its been a long time since we have gone crazy with Edamame salads in our household and i thought i shall try out something new,because its a wonderful bean or like we call in our house " Super bean".As most of the people might know its rich in protein,fiber and omega3 and micro nutrients like folic acid 9good for pregnant women i guess ,Manganese and vitamin K (thanks to Wikipedia)..So this recipe that i came up with especially with my friend sangi on mind, can be even used as a snack,a healthy one..Here is all that you need..

Level ( Once again easy)

Serves 2

Time : 12- 15 mins

Ingredients :

1/2 Cup shelled frozen Edamame
1/2 tsp salt
1 tsp crushed black pepper
1 tsp Curry powder ( or kitchen king masala powder)
1/2 tsp Olive oil




Method:

  1. Preheat the oven to 400 degrees F (200 degrees C). Place the edamame into a colander and rinse under cold water to thaw. Drain.
  2. Spread the edamame beans in a cookie tray. Drizzle with olive oil. Sprinkle curry powder over the top and season with salt and pepper.
  3. Bake in the preheated oven until the Edamame is nice and toasty, about 12- 15 minutes, but be very cautious not to burn the beans.So pull out the tray half way between and turn the beans over once with a wooden spatula to get a even toast.
  4. The edamame will crisp up once its cooled completely..Enjoy it as a snack on its own or with salads like i did..
