Tomato Jalapeno Garbanzo smooth soup



Though of making some soup for the dinner today,and just tossing in what i had in the fridge and pantry.This is a nice and flavorful soup which will fill you up for sure.I call it a smooth soup not just because of its texture,but because of its taste of adding jalapeno and garbanzo and blending it together which gives this soup its cheesy flavor in lieu of those high calorie cheesy soups...so here is what is needed..

Level : Easy

Time taken : 15 mins

Serves : 4 people

Ingredients :

1 can cubed organic tomatoes
1 can Garbanzo beans drained
1/2 Jalapeno pepper seeded and diced
1/2 cup chopped Green bell pepper
1/2 cup chopped carrots
1/2 cup chopped celery
2 bay leaves
1 tsp Extra Virgin Olive Oil
1 medium onion chopped
2 pods Garlic chopped (Optional)
1 tsp Apple cider vinegar
1 tsp Siracha hot sauce
salt & pepper to taste


Method :

  1. Heat Oil in a deep bottomed pan,add bayleaves, garlic and onion and saute for a min.
  2. Add in the celery,carrots and green bell pepper,saute for a couple of mins.
  3. Add the canned tomatoes,3 cups of water and chopped jalapeno pepper and bring to a boil, abt 5 mins.
  4. After the water has come to a boil,add in the Garbanzo beans,salt,hot sauce and vinegar and let it simmer for 5-7 mins.
  5. cool down and blend using an hand blender,and serve hot along with a couple of toasted whole wheat bread...Yumm...

Chinese Style Hot & Sour Soup

Hi friends,

Its time i post all my soup recipes,some tried from other blogs with my own alterations..i thought i shall begin by this wonderful ,feel good hot &? sour soup which is a heaven in a bowl for a cold winter night..Its a breexe to prepare this mouth watering soup. Here is what is needed.

Level : Easy

Preparation time : 5 mins

Cooking time : 12 mins

Ingredients :

2 cups Frozen mixed veggies
1 cup Chopped Cabbage
1 cup Chopped Cauliflower
1 cup Chopped Green peppers
1 Medium Onion
2 pods Garlic
1/4 inch piece of Ginger
1 Tbsp Apple Cider Vinegar
11/2 Tsp light Soy Sauce
3 Tbsp Siracha/Hot Sauce
1 cube Vegan Veggie Bouillon (or) 1/2 cup Chopped Celery
4 Cups Water
1/2 cup Lo mein noodles (or) Whole wheat Spaghetti
1 tbsp Olive oil
Salt to taste (if at all u need extra after adding the soy sauce
)
1 tbsp corn flour dissolved in a tbsp water for thickening









Method :

Heat Olive oil in a deep bottomed pan,add onions and saute till they turn transparent,add garlic & ginger and cook for a min.Add the mixed veggies,bell pepper ,cauliflower and cabbage and cook covered for 3 mins until the veggies is cooked half way.Add in the Vegan bouillon cube,water, hot sauce,soy sauce,vinegar. Add the noodles once the water comes to a boil and cook until the noodles are cooked completely.Add the corn flour at the end and cook for a min. Transfer the soup into a bowl and enjoy it while hot....Enjoy.
