Cheddar Paratha

Cheddar one of the favorite cheeses of America, with a salty nutty taste is my favorite Cheese too.The Sharp cheddar with the yellow color makes it pretty for garnishing almost anything..So yesterday i was eager to try the slight variation of Paneer paratha with Cheddar. Yield : 8 - 10 medium Sized Paratha's

Ingredients
:

Wheat Flour - 1 Cup
Boiled Potato -1
Medium
Chick peas / Garbanzo Beans - 1 can or 1 cup cooked
Peas and Carrot Boiled - 1/4 cup
Sauteed Onion - 1/4 cup
Grated Sharp Cheddar - 1/4 cup
Luke warm water - to knead into soft dough
Amchur Powder / Dry Mango Powder - 1 tsp
Red Chilli Powder - 1 tsp

Chat Powder - 1/2 tsp

Olive oil - 2 tsp
Salt & Sugar - 1/4 tsp ( sugar along with salt brings out the flavor of wheat)
Cilantro / Coriander Leaves - a small amount


Directions :
Saute the onion without any till it caramelizes into light brown color.Mash the boiled potato,Chickpeas, Onion,peas and carrot together.Now add Salt,sugar,Amchur powder,Chilli powder and Chat powder and mix well.Add 1 tsp olive oil along with the mixed veggies,Coriander leaves and cheddar,knead the dough into a soft ball using luke warm water and add the remaining oil and smear over the dough ball . Cover it with a clear plastic wrap and set aside for 1/2 hr. Knead the dough again and take equal parts of the dough ball, roll it with a rolling pin and throw in a hot tawa and cook until both sides are done approximately a couple of minutes on both sides or till brown dots appear. Apply a little Ghee or Butter immediately after taking out the tawa and store in a hot box. Serve hot with any Raita of your choice or Mint chutney and Enjoy ...

Variations :
This can also be done with any other type of peas apart from chick peas, and also with different kinds of cheese, like instead of paneer, we can choose ricotta to be even more softer.
