Oven Roasted curried Edamame,Corn Quinoa salad

hi friends,

Yesterday i was pondering over something to cook with Quinoa for lunch,this time i just did not wanna make it Indian style.So i came across a Black bean Quinoa salad recipe,which inspired me to try my own recipe..Well it seems like a lotta work,but believe me,its just so easy,i am going to try different recipes with Quinoa in the coming days..All you need is...

Level : Easy ( oh when am i gonnna start making something difficult??)

Time : 30 mins

Serves : 3 - 4 people

Ingredients :

3/4 cup toasted Quinoa (just toast it in a dry fry pan) -Toasted Quinoa gives a nice aroma, which is wonderful for salads
1-1/2 cup water
1/2 Cup Oven Roasted curried Edamame ( Recipe Follows)
1/2 Cup frozen corn (microwaved)
1 Medium tomato Chopped
1/4 cup cilantro (chopped)
1 tablespoon Extra virgin oilve oil
1 lime (juice)
1 tsp Chilli powder
1 teaspoon cumin powder
salt and pepper to taste
handful of toasted slivered almonds





Method :

1. Simmer the quinoa in the water until the water is absorbed, about 20 minutes.
2. Mix the quinoa, curried Edamame, corn, tomatoes and cilantro in a large bowl.
3. Mix the oil, lime juice, chilli powder, cumin, salt and pepper in a small bowl.
4. Toss the salad in the dressing sprinkle the toasted almonds and Enjoy.

Variations :- You can add Jalapeno instead of chilli powder,and toss in couple of handful of chopped colored bell pepper of your choice to make it even prettier,i did not have any on my had yesterday :)
